What I would start by doing is to examine how much my student already knows and embrace that. Having fun while doing it is important too, else it will get less and less interesting. I would also have conversations with the student and correcting his/her grammar mistakes, so she/he can learn from them.
I am a Havo student and I have helped my friends with Spanish school work, which all got great grades at the end. This would be a very good practice for my future because I would like to be a Spanish teacher.
